Ingredients

  • 3 ripe medium bananas, mashed
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easy removal.

In a medium bowl, mash the ripe bananas with a fork until mostly smooth, leaving a few small lumps for texture. Set aside.

In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using) until well combined.

In a separate medium bowl, whisk together the melted butter, granulated sugar, lightly beaten egg, and vanilla extract until the mixture is smooth.

Pour the wet ingredients into the dry ingredients bowl. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps of flour are acceptable.

Fold in the mashed bananas and chopped walnuts or pecans (if using) until they are evenly distributed throughout the batter.

Pour the banana bread batter into the prepared loaf pan and spread it evenly with your spatula.

Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.
