Ingredients
- 1 lb (450g) ground beef (80/20 blend preferred)
- 1 tbsp olive oil
- 1/2 white onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp tomato paste
- 1/3 cup beef broth or water
- 8-10 small corn tortillas
- Fresh cilantro, chopped (for garnish)
- Diced white onion (for garnish)
- Lime wedges
- Salsa or hot sauce of choice
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the finely diced onion and sauté for 2-3 minutes until softened.
- Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the minced garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Stir in the tomato paste and beef broth (or water). Reduce heat to low and simmer for 3-5 minutes until the sauce has thickened and coated the meat.
- While the beef simmers, warm the corn tortillas in a dry skillet over medium-high heat for about 30 seconds per side until pliable and slightly charred.
- Assemble the tacos by spooning the beef mixture onto the warm tortillas.
- Top with diced fresh onion, chopped cilantro, and a squeeze of fresh lime juice. Serve immediately with your favorite salsa.
